I suppose Super Bowl party planning is well underway, and while I do enjoy a good football game, I've never really been into the whole Super Bowl party thing. I'm sure it stems from the fact that I'm not really into NFL football. College football is where my interests lie (which is evident by clicking here). However, I do have to say, I have a mad crush and total admiration for a one Mr. Peyton Manning. (Insert my husband's disgusted look here) ;)
So, not one to turn down awesome party foods, you can find me at a Super Bowl party hovering over the food table. I love appetizers and isn't that what Super Bowl parties are all about really....the food?
Make these chipotle honey roasted peanuts for your Super Bowl gathering. They're quick, easy, and pretty tasty.

Chipotle Honey Roasted Peanuts

1/3 cup white sugar
1 1/2 teaspoon chipotle chile powder
1/4 teaspoon chili powder
1/4 teaspoon garlic powder
2 tablespoons butter
2 tablespoons honey
1 teaspoon kosher salt
1 pound skinless peanuts
Preheat the oven to 325 degrees.
Stir together the sugar, chipotle powder, chili powder and garlic powder in a small bowl; set aside.
In a large saucepan over medium heat, stir together the butter, honey, and kosher salt until the butter has melted and the mixture is bubbly. Stir in the peanuts until well coated and then pour out onto a 9x13 baking dish.
Bake in the oven until the nuts are a golden brown, about 25-30 minutes. Stir the mixture 2 or 3 times to ensure even cooking. Once they are done, scrape the peanuts into a large bowl and sprinkle with the spice mixture. Toss the peanuts to evenly coat with the spice mixture. Allow the peanuts to cool to room temperature, tossing every few minutes so the nuts do not stick together.
