If you are looking to make something quick, easy, and unbelievably cute for the kiddies for Valentine's Day, these cookie cups are the answer.
My daughter loved these. Not only because they are pink, but because they are a great way to consume frosting. :)
Cherry Almond Valentine Cookie Cups
Recipe adapted from Pillsbury
1 roll refrigerated sugar cookie dough
1/2 cup butter, softened
3 1/2 - 4 cups powdered sugar
1/2 teaspoon almond extract
1 teaspoon cherry extract
1-3 tablespoons of milk, if needed to get frosting to desired consistency
Preheat the over to 350 degrees and spray 24 mini muffin cups with cooking spray.
Next, scoop 1 tablespoon of cookie dough into each of the muffin cups. Press the dough in the bottom and up the sides of each muffin cup.
Bake the cookie cups for 10-13 minutes. Cool for 10 minutes in the pan and then remove to a cooling rack to cool completely.
In a medium mixing bowl, beat together the butter and powdered sugar until well combined. Add almond and cherry extracts and beat until combined. Add milk by tablespoon, if necessary.
In a large disposable decorating bag with a star tip, place the frosting in the bag and pipe the frosting inside the cookie cup. Sprinkle with colored sprinkles or sanding sugar.
Store loosely covered.
