Happy St. Patrick's Day!


What do you do with leftover Bailey's Irish Buttercream? You put it on brownie bites, of course.

I had some left over Bailey's Buttercream from my Guinness and Bailey's Whoopie Pies, so I thought instead of just eating it by the spoonfuls, I should bake something and use it. Brownies instantly came to mind. I just took a boxed brownie mix and used my mini muffin pan to turn them into "bites". Perfect for my co-workers!


*For the brownie bites, I followed the directions on the brownie mix box and used a lightly greased mini muffin pan. I baked the brownie bites at 325 degrees for 8-10 minutes.
